
Sher Elliston is a Registered Dietitian and Certified Diabetes Care & Education Specialist with 15+ years of clinical experience, currently teaching at Cal Poly, San Luis Obispo.
With a vast background in clinical nutrition, Sher is passionate about empathetic, patient centered care. She has extensive experience in diabetes care, working directly with patients to manage their condition through personalized treatment plans, lifestyle modifications, ongoing education, and insulin pump therapy.This hands-on experience has helped her understand the complexities of diabetes management, and nutrition counseling. She teaches nutrition at the college level where she uses her work experience to deepen students understanding of patient care.

Insulin Pump Trainer. Assigned insulin pump and continous glucose monitor trainings. Initiate pump therapy and follow up with patients to analyze blood glucose data trends.
Provide nutrition and diabetes education to pregnant patients with diabetes. Work with an interdispliary team to manage patient care. Manage insulin pump therapy for patients with Type 1 Diabetes. Analyze Continuous Glucose Monitoring (CGM) reports.

Clinical in-patient dietitian (1 year) and in-patient and out patient diabetes educator (9 years). Participate in rounds as an interdispiliary team. Educator to gestational diabetes clinic. Developed and provided diabetes education classes to patients newly diagnosed with Diabetes. Participate in research and ongoing education to nursing staff.

Contributor to grant awarded through the Wildfire Conservancy.
Researching interventions to diet and lifestyle that will aim to decrease the likelihood of developing cancer.
